The Club is home to two busy restaurants: The Terraces, open for lunch and dinner, seats around 80 covers with a menu featuring dishes cooked on the barbeque and fire table. Tasi is open daily for breakfast, serving a balance of healthy options and old favourites and also provides an informal setting for lunch with Mediterranean bistro-style dishes which can be enjoyed with a bottle of wine and a stunning view of the Ionian sea.
Evenings at Peligoni are a unique affair with something different happening each night. The Courtyard hosts weekly events including our open fire feast and food festival nights: live music accompanies pop up food stalls where our chefs produce creative and tasty street food. In addition to our usual weekly agenda we also host guest chef evenings, private parties and weddings that all require an extra eye for detail.
This role is perfect for a hospitality professional with a background in restaurant management, events coordination, and team leadership. While each restaurant has its own floor manager responsible for daily operations, the Restaurant & Events Manager will oversee all aspects of service quality, team performance, and event execution to maintain the club’s high standards.
KEY RESPONSIBILITIES
Restaurant Oversight
- Supervise the overall performance of The Terraces and Tasi, ensuring a seamless and efficient service
- Provide leadership and support to the restaurant floor managers, ensuring consistency in standards across both venues
- Work closely with the floor managers and hosts to manage reservations and optimise capacity
- Provide cover on the floor managers days off
- Encourage excellent working relationships between the restaurant, bar and kitchen teams to ensure smooth service flow
- Implement and encourage effective upselling techniques to achieve revenue targets
- Work with the F&B Manager to analyse sales data and implement strategies to drive additional revenue
Event Management & Delivery
- Lead the planning and execution of all weekly club events, including Guest chef events, open fire feasts, dinner parties, and food festival nights.
- Work with the events team to deliver private functions, including weddings, parties and bespoke experiences
- Oversee all food service aspects of special events, including set up, service and guest experience
- Ensure effective communication between the kitchen and front of house teams for seamless execution
- Brief restaurant teams ahead of events, ensuring clarity on service expectations, menus, and logistics
- Assist in the coordination of our Guest Chef Series, being a point of contact for the Guest Chefs once they arrive in Greece
Team Leadership & Development
- Support, mentor and develop the restaurant floor managers and their teams
- Conduct pre-season training to ensure all team members are well-versed in service standards, menu knowledge, and upselling techniques
- Provide continuous training and support throughout the season to maintain and improve service quality
- Encourage a positive and collaborative work environment, ensuring high team morale
- Create and manage staff schedules to ensure efficient coverage while optimising labour costs
ESSENTIAL REQUIREMENTS
- Proven experience in a restaurant management role, ideally in a high-end, fast-paced hospitality environment
- Experience coordinating large scale events including weddings and private parties
- Strong knowledge of food and beverage operations and service standards
- Strong leadership and people management skills
- Ability to inspire, motivate and develop a team
- Strong attention to detail
- Problem solving ability to resolve issues as they arise
- Understanding of EPOS operating systems
- Commercial awareness with experience in revenue management, upselling strategies, and cost control
- Passion for delivering exceptional guest experiences and maintaining high service standards
- Ability to work under pressure in a dynamic, seasonal environment
- Flexibility to adapt to changing demands and schedules throughout the season
- Strong communication skills and fluency in English
