PURPOSE

• Responsible for the wine service of all F&B service colleagues. Ensures all wines are tasted

and in pristine condition before being served to the guests and supports the outlet to ensure

smooth operation.

KEY RESPONSIBILITIES

• Embrace Jumeirah hallmarks.

• Report to duty on time.

• Attend briefing clarify any questions and share challenges with the team.

• Control and monitor wine orders, stock, and par level.

• Pick up wines from stores after properly checking the order and quantity.

• Maintain wine chillier at the correct temperature.

• Maintain temperature records.

• Communicate any changes required for outlet wine lists and standards in

coordination with outlet managers/Beverage Manager.

• Stock rotation update.

• Minimize wastage by avoiding too many opened bottles.

• Ensure all tables are attended during the service; refilling and fresh orders are taken

throughout.

• Build rapport with Junior Sommeliers and the team to enhance teamwork and smooth

operation.

• Ensure 100% contribution to LQA standards.

• Prepare mise en place well in advance.

• Attend outlet briefings.

• Report feedback and suggestions to the Beverage Manager and outlet managers.

• Send updates on the availabilities and nonavailabilities.

• Ensure wine cabinets are well arranged and kept clean all the time.

• Ensure proper labeling is done for all opened bottles, transfer or report as spoilage

according to set standards.

• Carry out inventories and explain any variances.

• Carry out cleaning of wine chillers for specific outlets assigned.

• Support the service team with their beverage service if needed.

• Support with additional tasks assigned by Beverage Managers.

• Lateral service if required by the team.

• Follow checklists and cleaning schedules.

• Meet deadlines for assigned tasks.

o Train colleagues on wine knowledge

Internal: HR, Finance, Stewarding

External: Outsourced Contractors, Suppliers, Guests

QUALIFICATIONS (MINIMUM EDUCATION)

Essential:

• Certified task and group trainer.

• WSET level 3 or equivalent.

• Intermediate level - Microsoft Office applications- particularly Excel and PowerPoint.

• High level of written and verbal business English.

• Complaint handling skills.

• Good tasting skills in wines and spirits of the World

Desired:

• Member of any sommelier association, wine lover association

• Any additional language like French, Italian, German, Arabic, and Russian.

• Extensive wine and beverage knowledge.

• Ability to sell by using techniques.

• 1-2 years of Food and Beverage Experience needed in a premium Fine Dining Establishment in a 5-star Hotel on a Management Level.
