F&B Manager
Job Responsibilities:
- Managing food & beverage costs, upholding menu standards and controlling inventory with the assistance of the Head Chef.
- Alongside the Head Chef create event-specific menus for occasions such as social occasions and other events.
- In addition to menu maintenance and event management, being involved with all full-service hospitality establishments' day-to-day functions, includes associate management, guest interactions, office administration duties, vendor communications and labour costs.
- Overseeing the management of staff and resolve any issues that may occur within the daily operation,
- Ensuring that operational standards are met regarding local sanitation regulations, food storage and loss prevention,
- Directing administration and planning of the Food & Beverage Department operations needs to meet day to day expectations,
- Clearly describing, assigning, and delegating responsibility and authority for the operation of the various food and beverage outlets, such as “in resident dining”, restaurants, clubs, banqueting, etc.
- Developing, implementing and monitor schedules for the operation of all restaurants and bars, to achieve profitable results,
- Implementing effective control of food, beverage, and labor costs within all F&B outlets.
- Assisting in establishing and achieving predetermined profit objectives and desired standards of quality in food, service, cleanliness, merchandising and promotion.
- Regularly reviewing and evaluating the degree of customer acceptance of the services provided by the Outlets.
- Developing (with the aid of the F&B outlet supervisors) operating tools, necessary for budgeting, forecasting purchase specifications, recipes, portion specifications, menu abstracts etc.
- Continuously evaluating the performance of the team and encouraging enhancement or development within the job function or in their career,
- Planning and administering a learning and development program within the department which will provide well-trained associates at all levels and permit advancement for those persons qualified and interested in career development,
- Being overall responsible for departmental matters as they relate to food & beverage service in conjunction with local regulation, protocols, and practices,
- Being a natural in adapting to basic service rules and demonstrate willingness to assist others,
- Maintaining harmonious relationships and good communication within the outlet, regardless of guests / patrons or other associates,
- Ensuring familiarisation with local food hygiene guidelines, as per the requirements from the local Health Authorities,
- Maintain a clean and pleasant appearance of all associates of the F&B Department,
- Ensuring punctuality in attendance and conform to the standards, which may be established from time to time for this position,
- Ability to work under varying schedules to reflect the business needs of the hotel due to the cyclical nature of the hospitality industry.
Required qualifications
- Minimum 2 years’ experience in a similar position,
- Degree/ diploma in hotel management or a related field,
- Ability to develop and analyze P&L, Food Cost statements and relevant reports,
- Working experience with POS systems (ideally Micros),
- Knowledge of MS Excel or a similar software,
- Ability to take decisions and act to meet financial targets,
- Incessant will to improve operations and set higher goals,
- Deep knowledge of and ability to adhere to health and safety regulations,
- Ability to spot and resolve problems efficiently,
- Ability to develop policies and procedures,
- Ability to organize and control orders & supplies,
- Competence in managing a team that maintains the highest of standards under pressure,
- Competence in employee training and development,
- Outstanding people management and organizational skills,
- Integrity, reliability & a spirit of cooperation,
- High levels of energy & diligence,
- Able to keep an eye on the detail,
- Excellent communication skills and fluency in English language.
