Executive Chef - ΚΗΦΙΣΙΑ

This position supervises kitchen operations to ensure customer receive an exceptional culinary experience, ensures that all kitchens provide food in accordance with our highly standards of quality, and maintains a safe and sanitary work environment for all employees. Other duties include menu planning, preparation of budgets, and management of food cost. Specific duties involve food preparation and the establishment of quality standards, training of employees in cooking methods, presentation techniques and portion control. Performs related duties as assigned by supervisor. This position reports directly to the General Manager.

 

 

Main Objectives of this role:

Overview of duties

  • Guarantees a high standard of culinary services offered to customers in conjunction with the Store Manager
  • Manages and motivates the kitchen staff in order to offer a high standard of service to customers
  • Is responsible for food hygiene, safety and quality in all our stores

 

Main responsibilities

Professional techniques / Production

  • Organizes and supervises food preparations in line with the occupancy and consumption forecasts
  • Supervises the different sections of the kitchen: production of hot and cold dishes, patisserie, dishwashing etc.
  • Prepares the cooking instructions and ensures they are duly applied
  • Oversees the whole work shift: ensures respect of the maximum waiting times defined by the brand, checks the presentation and temperature of dishes, etc.
  • Coordinates with restaurant serving staff in order to ensure that service runs smoothly
  • Plays an active role in the kitchen, leading by the example

Team management

  • Develops team spirit and motivation by creating a good working atmosphere
  • Takes part in or validates recruitments
  • Organizes the integration and training of new employees
  • Prepares and/or checks the work schedules in line with activity forecasts
  • Prepares the training plan for the kitchen staff and insures the implementation
  • Helps employees improve their skills and provides support for career development

Commercial / Sales

  • Keeps track of trends in the food production market
  • Regularly assesses the quality of services based on customers' remarks and quality audits
  • Keeps informed of developments in competition
  • Maintains excellent relations with suppliers
  • Positions the pricing policy to suit the market

Manages stocks and supplies

  • Organizes the kitchen staff to suit need and optimizes headcount to improve ""prime cost""
  • Respects the productivity ratios as budgeted
  • With the team, is continually looking for ways to improve costs and ratios while maintaining the high standard of service
  • Is actively involved in daily procedures and justifies any differences
  • Hygiene / Personal safety / Environment
  • Ensures that the equipment and appliances under his/her responsibility are used correctly and kept in good condition by kitchen staff
  • Ensures the respect and due application of the rules of hygiene in the department (HACCP standards etc.)
  • Sets up an action plan following the hygiene analysis results and tracks implementation
  • Checks that employees' uniforms are clean and in good condition
  • Ensures that safety instructions are respected for the use of kitchen equipment

 

Skills and Technical requirements:

  • Experience of working in small manufacturing
  • Ideally an understanding of manufacturing processes
  • Excellent communication skills
  • Be able to listen to and understand the needs and expectations of your staff, knowing how to provide suitable advice in all situations
  • Ability to foresee problems and set priorities. Be able to make time to address your teams’ unforeseeable problems
  • Through actions, encourage team spirit, integration, training and development of the staff
  • Ensure respect of individuals and company interests. Be able to act in a respectful, ethical and exemplary manner in all circumstances
  • Be able to set priorities, to keep the situation under control in all circumstances and to turn stress into action
  • Analyze and understand your environment and your evolution as well as your staff’s objectives within the company in order to integrate them into their actions. Be open to changes and ideas coming from others to improve their own results and company results
  • Good project management skills
  • Good presentation skills
  • Good numeracy and computer skills
  • Knowledge of manufacturing quality standards
  • An understanding of health and safety responsibilities and legislation.
  • Ability to speak French is an advantage
