Each property assimilates and is designed to highlight the unique characteristics of its host location within a carefully selected setting rich in Greek history, culture, and stunning landscapes. In order to support our rapid growth we are seeking to hire a Pastry Chef.

Our new Pastry Chef will implement our Service Excellence Culture at our fully renovated resort in Crete, Rocrita Lifestyle Beach Resort, which is located in the charming area of Mochlos, Crete. Our hotel is a haven for travelers seeking a refined and inspirational stay with their loved ones, and will be opening its doors for the season 2025. Position Summary

The Pastry Chef is responsible for creating a wide variety of high-quality, visually appealing, and delicious pastries, desserts, bread, and other baked goods. They ensure that all culinary offerings meet the highest standards of quality, taste, and presentation, contributing to the overall success of the restaurant or bakery. The role is also pivotal in maintaining kitchen efficiency, hygiene standards, and helping the kitchen team excel.

Main Responsibilities & Accountabilities

Pastry Production

  • Create and execute dessert and pastry menus according to season, trends, and customer preferences.
  • Prepare, bake, and present high-quality pastries and baked goods in line with the restaurant’s standards.
  • Ensure consistency in taste, portioning, and presentation of all pastry items.

Menu Development

  • Collaborate with the Head Chef or Executive Chef to develop innovative pastry recipes.
  • Test and refine recipes to improve quality and efficiency.
  • Adjust recipes based on feedback and business needs.

Inventory & Cost Control

  • Manage the inventory of pastry ingredients, ensuring proper stock levels and minimizing waste.
  • Track and control costs by reducing waste, improving efficiency, and managing portion sizes.
  • Order ingredients and supplies as needed, while staying within budget.

Team Leadership

  • Train, supervise, and mentor junior pastry staff and kitchen assistants.
  • Ensure smooth operation of the pastry section during service.
  • Collaborate with the broader kitchen team to ensure overall meal timing and coordination.

Quality & Hygiene

  • Ensure that all pastries are produced in compliance with food safety standards and kitchen hygiene protocols.
  • Maintain cleanliness and organization of the pastry area at all times.
  • Enforce health and safety regulations and ensure proper food storage.

Customer Satisfaction

  • Interact with guests to receive feedback on pastries and desserts when necessary.
  • Adjust offerings and presentation based on customer preferences or dietary restrictions.
  • Strive for customer satisfaction through creativity, innovation, and a focus on delivering the best experience.


Requirements

  • A diploma or certification in Culinary Arts, Baking & Pastry Arts, or a related field is preferred.
  • Minimum of 3-5 years of experience in a professional kitchen, specializing in pastry or baking.
  • Experience working in high-end restaurants, hotels, or bakeries is a plus.
  • In-depth knowledge of pastry techniques, ingredients, and tools.
  • Familiarity with kitchen equipment and ability to handle a variety of tasks in a fast-paced environment.
  • Proficiency in creating a variety of pastries, including cakes, tarts, bread, and plated desserts.
  • Knowledge and certification in food safety regulations (e.g. HACCP).
  • Ability to create unique and appealing pastry items and experiment with new techniques and ingredients.
  • Meticulous in the presentation, flavor, and texture of all pastry creations.
  • Ability to work efficiently under pressure, manage multiple tasks, and meet deadlines.
  • Ability to lead and mentor junior staff, providing training and fostering a team spirit.
  • Ability to adjust recipes and offerings based on feedback, seasonality, and business needs.
  • Strong enthusiasm and dedication to the craft of pastry and dessert making.
